Veracruz-Style Avocado and Beans Tamales

  • 1/2 kilos vegetable shortening
  • 1/2 kilos masa dough
  • 6 dried chiles
  • 3 tablespoons baking powder
  • 2 cans refried beans
  • sesame seeds
  • chicken broth
  • 10 corn husks
  • salt
  • 1 avocado, cut into small-sized cubes

  • In a bowl, cream vegetable shortening. Add masa dough little by little, chicken broth, baking powder, and salt. Mix thoroughly.
  • On a griddle, toast sesame seeds and dried chiles. In another bowl, combine toasted sesame seeds, dried chiles, and beans.
  • Form bean balls. Spread a bed of tamal dough on a corn husk and stuff with a bean ball. Cut the tips of the corn husks. Arrange tamales in a steamer and cook until cooked through.
  • Garnish Veracruz-style tamales with avocado cut into cubes and cream on top.
  • Serve avocado and beans Veracruz-style tamales garnished with avocado, cream, and cheese on top.
